Base and Bread
- 4 large slices of sourdough bread (£1.15)
- 1 tbsp extra virgin olive oil
- 2 cloves of garlic
Toppings
- 250 g mozzarella (2 balls, thinly sliced) (£1.20)
- 2 beef tomatoes (£1.10)
- 1 bunch fresh basil, leaves removed from stems (£0.55)
- 250 ml passata (£0.45)
- 50 g parmesan cheese (£0.87)
- Salt and pepper to taste
- Sprinkle of oregano (quantity as desired)
Instructions
- Prepare the Bread: Heat a frying pan over medium heat with a little drizzle of extra virgin olive oil. Place two slices of sourdough bread in the pan. While the bread cooks, rub the cut side of a garlic clove on the upper surface of the bread to infuse it with flavor. You can do this off heat if you want to avoid burning your fingers.
- Fry the Bread: Fry each side for about 2 minutes or until the bread turns golden and slightly crispy. Work in batches of two slices at a time. Once fried, transfer the sourdough slices onto a baking tray.
- Assemble Initial Toppings: Pat the mozzarella slices dry with a paper towel to remove excess moisture. Layer the mozzarella evenly on each slice of fried sourdough, then add fresh basil leaves and thin slices of beef tomato on top. Drizzle a little extra virgin olive oil and season with salt to taste.
- Bake First Round: Preheat the oven to 180°C (350°F). Place the assembled toasts in the oven and bake for 15 minutes to melt the cheese and soften the tomatoes.
- Add Final Toppings: Remove the toasts from the oven and spoon approximately 2 tablespoons of passata onto each slice. Sprinkle grated parmesan cheese and a pinch of dried oregano over the top.
- Bake Again: Return the toasts to the oven for an additional 5 minutes, allowing the parmesan to melt and the passata to heat through.
