For the Pumpkin and Brie
- 1 small pumpkin (about 3–4 pounds)
- 1 wheel of brie (8 ounces)
- 1 tsp olive oil
For the Hot Honey
- 1/4 cup honey
- 1/4 tsp chipotle powder
- Crushed red pepper flakes, to taste (about 1/8 tsp)
- Pinch of ground cinnamon
- Pinch of salt
To Garnish
- Fresh chives, chopped (about 1 tbsp)
- Reserved hot honey (from above)
Instructions
- Prepare the Pumpkin: Carefully hollow out the pumpkin to create enough space for the brie wheel. Remove seeds and stringy bits, leaving a sturdy shell.
- Roast the Pumpkin: Lightly brush the inside of the hollowed pumpkin with olive oil. Place it on a baking sheet and bake at 400°F (200°C) for 20 minutes until slightly tender.
- Pat Dry the Pumpkin: Remove the pumpkin from the oven and pat the inside dry with paper towels to prevent excess moisture during baking with the cheese.
- Make the Hot Honey: In a small bowl, combine honey, chipotle powder, crushed red pepper flakes, cinnamon, and salt. Stir well to blend the flavors.
- Assemble the Brie in Pumpkin: Drizzle some of the prepared hot honey inside the roasted pumpkin. Place the brie wheel inside and lightly score the surface of the cheese to allow flavors to penetrate.
- Add More Honey: Drizzle more hot honey over the scored brie, reserving a small amount for serving.
- Bake Covered: Cover the pumpkin with its ‘lid’ and bake at 400°F for 10 minutes. Then, remove the lid and continue baking uncovered for an additional 15 minutes until the brie is melted and bubbly.
- Garnish and Serve: Remove from the oven, drizzle with the reserved hot honey, sprinkle chopped fresh chives on top, and serve warm for a spectacular appetizer.
