For the Pumpkin and Brie

  • 1 small pumpkin (about 34 pounds)
  • 1 wheel of brie (8 ounces)
  • 1 tsp olive oil

For the Hot Honey

  • 1/4 cup honey
  • 1/4 tsp chipotle powder
  • Crushed red pepper flakes, to taste (about 1/8 tsp)
  • Pinch of ground cinnamon
  • Pinch of salt

To Garnish

  • Fresh chives, chopped (about 1 tbsp)
  • Reserved hot honey (from above)

Instructions

  1. Prepare the Pumpkin: Carefully hollow out the pumpkin to create enough space for the brie wheel. Remove seeds and stringy bits, leaving a sturdy shell.
  2. Roast the Pumpkin: Lightly brush the inside of the hollowed pumpkin with olive oil. Place it on a baking sheet and bake at 400°F (200°C) for 20 minutes until slightly tender.
  3. Pat Dry the Pumpkin: Remove the pumpkin from the oven and pat the inside dry with paper towels to prevent excess moisture during baking with the cheese.
  4. Make the Hot Honey: In a small bowl, combine honey, chipotle powder, crushed red pepper flakes, cinnamon, and salt. Stir well to blend the flavors.
  5. Assemble the Brie in Pumpkin: Drizzle some of the prepared hot honey inside the roasted pumpkin. Place the brie wheel inside and lightly score the surface of the cheese to allow flavors to penetrate.
  6. Add More Honey: Drizzle more hot honey over the scored brie, reserving a small amount for serving.
  7. Bake Covered: Cover the pumpkin with its ‘lid’ and bake at 400°F for 10 minutes. Then, remove the lid and continue baking uncovered for an additional 15 minutes until the brie is melted and bubbly.
  8. Garnish and Serve: Remove from the oven, drizzle with the reserved hot honey, sprinkle chopped fresh chives on top, and serve warm for a spectacular appetizer.
