For The Cookie

  • 1 cup unsalted butter, chilled and cubed
  • 1 cup granulated sugar
  • ⅔ cup light brown sugar, packed
  • 1 egg yolk
  • 1 large egg
  • ½ cup pumpkin puree
  • 2 teaspoons vanilla extract
  • 3⅓ cups all-purpose flour
  • 1½ teaspoons salt
  • 2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon

Cinnamon Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • ¾ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Salted Caramel Sauce Instructions – In a medium saucepan, combine sugar, water, and corn syrup. Cook until amber, then whisk in warm cream, vanilla, and salt. Cool and refrigerate.
  2. Cinnamon Streusel Instructions – Mix flour, sugars, cinnamon, and salt. Add melted butter to form clumps. Bake, cool, and break into pieces.
  3. For The Cookies – Cream butter and sugars, add eggs, pumpkin, and vanilla. Mix in dry ingredients. Bake and cool.
  4. Cream Cheese Frosting Instructions – Beat butter and cream cheese, then add sugar, vanilla, cinnamon, and salt. Beat until fluffy.
  5. Assembly – Frost cooled cookies with cream cheese frosting, drizzle with salted caramel, top with streusel, and sprinkle with sea salt.
