Ingredients
Scale
Egg Mixture:
- 3 large eggs
- 3/4 cup milk
- 1/2 cup pumpkin puree (not pumpkin pie filling)
- 1 tablespoon light brown sugar
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon pumpkin pie spice
Additional:
- Butter (for griddle or pan)
- 10 slices brioche bread (or your favorite bread)
- Maple syrup, butter, and powdered sugar (for serving)
Instructions
- Preheat Griddle: Preheat an electric griddle and set it aside.
- Mix Egg Mixture: In a 9×13 pan or large mixing bowl, whisk together eggs, milk, pumpkin, brown sugar, vanilla extract, cinnamon, and pumpkin pie spice.
- Prepare Griddle: Butter the preheated griddle.
- Cook French Toast: Dip both sides of each bread slice into the egg mixture, then transfer to the griddle. Cook until golden brown on both sides, about 3-4 minutes per side.
- Serve: Serve warm with maple syrup, butter, and powdered sugar.
Notes
- We recommend using a shallow 9×13 pan for easier dipping.
- If you don’t have an electric griddle, a non-stick skillet works well too.
- French toast can be stored in the fridge for up to 3 days or in the freezer for up to 2 months. Reheat before serving.
