Pumpkin Filling:

- 1 cup mascarpone cheese

- 1 tablespoon fresh lemon juice
- 2 large eggs
- 1/4 teaspoon salt
Pie Crust:
- One single 9-inch pie crust, homemade or store-bought (thawed)
Instructions
- Preheat oven to 350F.
- Fit the pie crust into a 9-inch dish.
- Bake for 1 hour until set.
In a large mixing bowl, combine pumpkin puree, mascarpone cheese, brown sugar, pumpkin pie spice, vanilla extract, lemon juice, eggs, and salt. Mix until smooth.
Pour the pumpkin filling into the crust. Smooth the top and decorate with cut-out leaves.
