Instructions
- Prepare the pan: Use cooking spray to grease the bottom and sides of a 9×13-inch baking dish; set aside to prevent sticking.
- Cut the bread: Slice the French bread into 1 1/2 inch cubes until you have approximately 12 cups. Place about two-thirds of the bread cubes into the bottom of the prepared dish, creating the first layer.
- Make cream cheese mixture: In a small bowl, mix the softened cream cheese with 1/3 cup sugar until smooth and creamy, free of lumps.
- Layer cream cheese: Spoon dollops of the cream cheese mixture evenly over the layer of bread cubes; no need to spread it out fully as it will melt and settle during baking.
- Add raspberries and remaining bread: Sprinkle the raspberries over the cream cheese layer, then add the remaining bread cubes as the top layer, distributing evenly.
- Prepare custard: In a large bowl, whisk together the eggs. Gradually add the milk, 1/2 cup sugar, and vanilla extract, whisking until well combined.
- Combine and soak: Pour the egg mixture evenly over the layered bread, cream cheese, and berries. Press down gently on the bread cubes to help them absorb the custard mixture. Cover the casserole with a lid or plastic wrap and refrigerate overnight to allow thorough soaking and flavor melding.
