Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F (204 degrees C) to prepare for roasting the cauliflower.
  2. Toss Cauliflower: In a large bowl, toss the cauliflower florets with avocado oil, sea salt, and black pepper until they are evenly coated.
  3. Roast Cauliflower: Spread the cauliflower in a single layer on a baking sheet. Roast it in the preheated oven for 25-30 minutes until the florets are tender and lightly browned, enhancing their flavor and texture.
  4. Assemble Casserole: Keep the oven on. Transfer the roasted cauliflower to the bottom of a 9×13-inch baking dish. Layer the sauerkraut evenly over the cauliflower, then drizzle the thousand island dressing over the top. Add the chopped corned beef as the next layer, and finally, cover everything with Swiss cheese slices.
