- 5 Tbsp butter
- 10 oz bag marshmallows
- 1/2 cup peanut butter
- 6 cups Rice Krispies cereal
- 25 Reese’s cup minis
Coating and Decoration
- 24 oz White Almond Bark
- Sprinkles (quantity as desired)
Instructions
- Melt Butter and Mix Marshmallows and Peanut Butter: In a medium-sized pot over medium to low heat, melt the butter. Add the marshmallows and peanut butter, stirring continuously until the mixture is fully melted and smooth.
- Add Rice Krispies and Cool: Remove the pot from heat, then add the Rice Krispies cereal. Stir well to ensure all the cereal is evenly coated. Let the mixture cool for about 10 minutes to make it easier to handle.
- Form Snowballs with Reese’s Cups: Line a baking sheet with parchment paper. Take approximately a tablespoon of the cooled mixture and flatten it in your hand. Place one Reese’s cup mini in the center, then carefully roll and shape the mixture into a ball around it. Repeat until all mixture and candies are used.
- Coat Snowballs with Melted Almond Bark: Melt the white almond bark according to package instructions (usually in the microwave or over a double boiler). Dip each snowball into the melted almond bark coating fully, then place back on the parchment paper.
- Decorate and Chill: Sprinkle your desired colorful sprinkles on the wet coating immediately. Once decorated, place the baking sheet with the dipped snowballs into the fridge for about 25 minutes to allow the coating to set.
Notes
- Ensure the marshmallow mixture is not too hot before mixing in cereal to avoid a soggy texture.
- Using parchment paper prevents sticking and makes cleanup easier.
- The Reese’s cup mini should be slightly pressed into the mixture to secure it inside the ball properly.
- You can substitute white almond bark with white chocolate chips if preferred.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
