Instructions

  1. Cook the Apples: Add 1/3 cup water, diced apples, and ground cinnamon to a pot over high heat. Cook for 8 to 10 minutes, stirring occasionally, until the apples become soft and the water has completely evaporated.
  2. Mix Filling Ingredients: Stir in the coconut sugar and finely chopped walnuts into the softened apple mixture to combine evenly.
  3. Soften Rice Paper Sheets: Working one sheet at a time, dip each rice paper sheet into room temperature water until just softened but still pliable. Lay the first softened sheet onto a clean work surface and overlap the remaining two softened sheets slightly over it to create a layered base.
  4. Add Filling and Roll: Evenly spread the apple filling over the layered rice paper sheets. Starting from the edge closest to you, gently roll the sheets over the filling like a long, skinny burrito. Fold in the sides as you roll to encase the filling completely, forming a rope-like shape.
  5. Form the Pie Coil: Take one end of the rolled ‘rope’ and carefully coil it onto itself, forming a spiral shape that resembles a traditional apple pie swirl.
  6. Prepare for Cooking: Brush the top of the rice paper coil with melted butter and sprinkle a little extra coconut sugar on top for added sweetness and crispiness.
