Deliciously tender and flavorful roasted artichokes are a perfect side dish or appetizer. This easy recipe involves trimming, seasoning, and roasting fresh artichokes with garlic, lemon, and butter for a rustic and aromatic dish that highlights the natural sweetness and earthiness of artichokes.

  • 3 large Artichokes

Seasoning & Extras

  • 2 tbsp Olive oil
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 6 cloves Garlic (peeled)
  • 1 medium Lemon (sliced into half moons and then triangles)
  • 1 tbsp Unsalted butter (softened)

Instructions

  1. Preheat Oven: Preheat your oven to 450 degrees F (232 degrees C) to prepare for roasting the artichokes.
  2. Trim Artichokes: Lay each artichoke sideways and trim 1 inch off the top and the bottom of the stem. Remove any tough outer leaves near the stem. Use kitchen shears to snip off the sharp tips of remaining leaves. Cut each artichoke in half lengthwise through the middle, then rub all over immediately with a lemon slice to prevent browning.
  3. Remove the Choke: With a spoon, gently twist and scoop out the fuzzy choke from the inner bottom part of each artichoke half.
  4. Prepare All Artichokes: Repeat the trimming and choke removal for all three artichokes, ensuring they’re ready for seasoning and roasting.
  5. Season and Layer: Place artichokes cut side up in a 9×13 stoneware baking dish. Brush with olive oil and season with sea salt and black pepper evenly.
  6. Add Garlic and Lemon: Insert one peeled garlic clove into the center of each artichoke half, then top with lemon slices to lock the garlic inside. Cut lemon slices smaller if needed to fit snugly.
  7. Flip and Season Outer Side: Carefully flip the artichokes cut side down, keeping the garlic and lemon inside. Brush the outer side with olive oil and season again with sea salt and black pepper.
  8. Cover and Bake: Cover the pan tightly with foil and roast in the preheated oven for 30 to 35 minutes, until a knife slides into the base easily, indicating tenderness.
  9. Make Garlic Butter: Remove the foil and flip the artichokes cut side up. Remove garlic cloves and place them into a small bowl. Mash the garlic with softened butter to make a flavorful garlic butter spread.
  10. Finish Roasting: Spread the garlic butter over the artichoke halves and return to the oven, cut side up, for 1 to 3 minutes until the butter melts and begins to brown slightly, enhancing flavor and presentation.

Notes

  • Using fresh lemon slices to rub the artichokes prevents discoloration and adds a bright flavor.
  • Be careful when trimming artichokes; the leaves have sharp edges that can be trimmed with kitchen shears for safety.
  • If you don’t have a stoneware baking dish, any oven-safe dish will work well for roasting.
  • Softened butter is easier to mash with garlic and spread over the artichoke halves.
  • Check the doneness of artichokes by inserting a knife near the base; it should slide in easily when cooked through.
