Drizzle them evenly with extra-virgin olive oil and season with salt and pepper. Roast in the oven for 15 minutes to begin softening and caramelizing the onions.
  2. Prepare Cream Sauce: While the onions roast, combine the heavy cream and dry white wine in a small saucepan. Heat it on the stovetop and let it simmer gently until bubbles appear around the edges, then remove from heat and set aside. This will create a flavorful creamy sauce that complements the onions.
  3. Increase Oven Temperature and Assemble Dish: Once the onions have roasted for 15 minutes, increase the oven temperature to 450°F (232°C). Carefully transfer the roasted onion rings to a shallow baking dish, maintaining their ring shape. Slowly pour the warm cream and wine sauce over the onions, ensuring even coverage.
