Roasted Garlic:
- 1 head of garlic
- 1 tablespoon olive oil
Aioli:
- 1 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (optional)
- Fresh herbs (like parsley or chives, for garnish, optional)
Instructions
- Preheat your oven: to 400°F (200°C).
- Prepare the garlic: Peel away the outer layers of the garlic head, keeping the cloves intact.
- Expose the cloves: Cut about 1/4 inch off the top of the garlic head to expose the cloves.
- Roast the garlic: Drizzle olive oil over the exposed cloves. Wrap the garlic head in aluminum foil tightly. Roast in the preheated oven for 30-35 minutes until the cloves are soft and golden brown.
- Prepare the aioli: Remove from the oven and let cool. Squeeze the roasted garlic cloves into a small bowl to create a smooth paste. In a medium mixing bowl, combine mayonnaise, roasted garlic paste, lemon juice, Dijon mustard, salt, and black pepper. Whisk until well combined. Drizzle in olive oil if desired for a richer flavor. Taste and adjust seasoning.
- Chill and serve: Cover the bowl and refrigerate for at least 30 minutes. Stir before serving and garnish with fresh herbs if desired. Serve and enjoy!
