Instructions

  1. Chop the Pistachios: Place the raw shelled pistachios in a food processor and pulse on the Chop setting until they are coarsely chopped, leaving some larger pieces for texture in the energy balls.
  2. Soak the Dates: Soak the pitted dried unsweetened dates in hot water for 10 minutes to soften them, making them easier to process and blend.
  3. Combine Dates and Pistachios: Drain the soaked dates and add them to the food processor with the chopped pistachios. Pulse again until the dates are finely chopped and the mixture starts to come together and stick.
  4. Add Flavorings: Add the dried rose petals, honey, ground cardamom, and a pinch of sea salt to the mixture. Pulse until well combined, allowing the rose petals to break down slightly but still retain some texture for an aromatic touch.
  5. Form the Energy Balls: Using about one tablespoon of the mixture per ball, roll spoonfuls between your palms to form small, firm balls. If the mixture feels too sticky, wet your hands slightly or dust them with crushed pistachios to make rolling easier.
  6. Chill to Firm Up: Place the rolled energy balls on a parchment-lined tray and refrigerate for at least 30 minutes. This helps them set and firm up properly.
  7. Store and Serve: Store the energy balls in an airtight container in the refrigerator for up to one week. Optionally, roll them in extra crushed pistachios or dried rose petals for added flair before serving.
