Description
This Sheet-Pan Steak Frites recipe delivers a classic French bistro meal made easy by cooking steak and fries together under the broiler. Using a single pan, the NY strip steaks are seasoned, oiled, and broiled alongside hand-cut-style frozen fries for a perfectly cooked medium-rare steak with crispy fries, ideal for a quick yet impressive dinner.
Ingredients
Scale
Steak
- 2 (1″-thick) NY strip steaks
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2 tbsp vegetable oil
Fries
- 1/2 (28-oz.) bag frozen hand-cut-style French fries
Serving
- Mayonnaise, for serving (optional)
Instructions
- Prepare the oven and steak: Arrange a rack in the upper third of your oven and preheat the broiler. Pat the steaks dry thoroughly with paper towels to ensure better searing. Generously season both sides of the steaks with kosher salt and freshly ground black pepper, then brush evenly with vegetable oil on each side.
- Arrange steaks and fries on baking sheet: Place the steaks on one half of a baking sheet, ensuring they have ample space. Spread the frozen hand-cut-style French fries evenly on the other half of the sheet in a single layer to promote even crisping during cooking.
- Broil the steak and fries: Place the baking sheet under the preheated broiler and cook for 5 minutes initially. After that, flip the steaks to the other side and toss the fries for even cooking. Continue broiling for an additional 3 to 5 minutes or until the steaks reach medium-rare temperature, approximately 125°F as measured with an instant-read thermometer. If needed, broil in 1-minute increments until the desired doneness is achieved. If the steak requires additional time, remove the fries to prevent overcooking.
- Rest the steak: Transfer the cooked steak to a cutting board or plate and let it rest for 5 minutes. Resting allows juices to redistribute, ensuring a tender, juicy steak.
- Slice and serve: Thinly slice the steak against the grain to maximize tenderness. Divide the slices between plates and serve alongside the crispy fries. Offer mayonnaise for dipping fries if desired.
Notes
- Use an instant-read thermometer to ensure steak reaches perfect medium-rare doneness at 125°F.
- Resting the steak before slicing is essential to retain juices and tenderness.
- Frozen hand-cut fries work best for crispiness and convenience; avoid overcrowding the fries on the baking sheet to prevent sogginess.
- Adjust broiling time according to your oven’s broiler strength, as it may vary.
- The optional mayonnaise dipping sauce adds a creamy contrast to the crispy fries.
