For the brisket:
- 3 Tbsp olive oil, divided
- 4 lb beef brisket
- 2 tsp sea salt, or to taste
- 1 tsp freshly ground black pepper
For the vegetables and broth:
- 1 lb yellow onions (2 medium), sliced into thick strips
- 1 lb mushrooms, thickly sliced
- 6 garlic cloves, peeled and chopped
- 2 cups low-sodium chicken stock or beef broth
- 2 ½ Tbsp Worcestershire sauce
Instructions
- Season and Sear the Brisket: Generously season the brisket with salt and pepper. Sear in a hot skillet until browned.
- Caramelize the Onions: Sauté the onions until caramelized and place them on top of the brisket.
- Cook the Mushrooms and Garlic: Sauté mushrooms, add garlic, and then add them to the slow cooker.
- Prepare the Broth: Combine chicken broth and Worcestershire sauce, then pour over the brisket and vegetables.
- Slow Cook the Brisket: Cook on low for 7-8 hours until tender.
- Shred and Serve: Shred the beef, return to slow cooker, and serve with mushrooms and juices.
