  • Author: Mariam
  • Total Time: 5 hours 10 minutes
  • Yield: 4 servings 1x

Description

A flavorful and easy Slow Cooker Pepper Steak recipe featuring tender beef strips cooked with vibrant bell peppers and onions in a savory, slightly sweet sauce. Perfect for a hands-off meal that allows the flavors to meld beautifully over several hours.

Ingredients

Scale

Meat and Vegetables

  • 2 lbs. beef strips
  • 1 green bell pepper, sliced thick
  • 1 red bell pepper, sliced thick
  • 1 white onion, sliced

Sauce and Seasonings

  • ½ cup water
  • 2 beef bouillon cubes
  • 3 Tbsp. soy sauce
  • 1 tsp. Worcestershire sauce
  • ¼ tsp. ground ginger
  • ¼ tsp. garlic powder
  • ½ tsp. black pepper
  • 2 tsp. brown sugar (or honey or white sugar)
  • 1 Tbsp. cornstarch
  • ¼ tsp. red pepper flakes (optional)

Instructions

  1. Prepare Bouillon Mixture: In a small microwavable bowl, combine the water and beef bouillon cubes. Microwave for 30 seconds, then stir until the bouillon cubes dissolve completely using the back of a spoon or whisk. If a microwave is not available, boil the water on the stovetop and then dissolve the bouillon.
  2. Mix Sauce Ingredients: Add the soy sauce, Worcestershire sauce, ground ginger, garlic powder, black pepper, brown sugar, and cornstarch to the dissolved bouillon mixture. Whisk thoroughly until smooth and well combined. Add red pepper flakes if you prefer a spicy kick.
  3. Combine Ingredients in Slow Cooker: Pour the prepared sauce into the slow cooker. Layer the beef strips, green and red bell peppers, and sliced onion evenly over the sauce.
  4. Slow Cook: Cover the slow cooker and cook on LOW heat for 5 hours, allowing the beef to become tender and the flavors to meld perfectly.

Notes

  • You can substitute honey or white sugar for brown sugar depending on your preference.
  • If you prefer less heat, omit the red pepper flakes.
  • For thicker sauce, you can mix a little extra cornstarch with cold water and stir it in at the end of cooking, then cook on high for 15 minutes more.
  • Serve over steamed rice or alongside noodles for a complete meal.
