Rice Krispie Treats:

  • 6 cups (158g) Rice Krispies Cereal
  • 5 tablespoons (70g) unsalted butter
  • 10 ounces (283g) mini marshmallows
  • 1 teaspoon (15ml) vanilla extract

Chocolate Layer:

  • 4 cups (680g) chocolate chips, divided

Graham Cracker Layer:

  • 8 Graham crackers (approx)

Instructions

  1. Prepare Pan: Line a 9×13-inch pan with foil or parchment and spray with nonstick cooking spray.
  2. Prepare Cereal: Place Rice Krispies cereal in a large bowl.
  3. Prepare Marshmallows: Set aside 10 ounces of mini marshmallows.
  4. Melt Butter: In a large pot over medium-low heat, melt the butter.
  5. Melt Marshmallows: Add the marshmallows to the melted butter, stir until melted, then remove from heat and mix in the vanilla extract.
  6. Combine Ingredients: Add the cereal to the marshmallow mixture, stir to coat, then pour into the prepared pan and press firmly to compact.
  7. Add Chocolate Layer: Melt 1 ½ cups of chocolate chips and spread in an even layer over the cereal treats. Layer with Graham crackers.
  8. Add Marshmallow Layer: Melt another 1 ½ cups of chocolate chips, spread over the Graham crackers, and immediately top with the remaining mini marshmallows.
  9. Drizzle Chocolate: Melt the last cup of chocolate chips, drizzle over the marshmallows.
  10. Set and Slice: Let the bars set until firm, then slice into bars. Store in an airtight container or freeze for later enjoyment.
