Description

A comforting and hearty Snow Day Soup featuring tender potatoes, sweet corn, rotisserie chicken, and crispy bacon, richened with milk and thickened with cornstarch for a creamy texture. Perfect for chilly days, this soup is easily made in either an Instant Pot or slow cooker for convenience.

  • 4 slices of bacon, cooked and crumbled
  • 1 Tbsp bacon grease

Vegetables & Broth

  • 1/2 cup diced onion
  • 3 cups chicken broth
  • 20 ounces peeled and cubed Russet potatoes
  • 1 cup frozen sweet corn

Seasonings

  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • Pinch of red pepper flakes

Protein

  • 2 cups chopped, cooked rotisserie chicken

Dairy & Thickener

  • 3 cups milk
  • 3 Tbsp cornstarch

Instructions

  1. Prepare bacon: Cook 4 slices of bacon until crispy (using an air fryer is recommended). Crumble and set aside. Reserve 1 Tbsp of bacon grease for sautéing.
  2. Sauté onion: Turn Instant Pot to sauté setting (or heat a pan if using slow cooker). When hot, add 1 Tbsp bacon grease and 1/2 cup diced onion. Sauté for 3 minutes until soft and fragrant.
  3. Add broth: Pour in 3 cups chicken broth and scrape the bottom to release any browned bits (if using Instant Pot). Turn off Instant Pot or remove pan from heat if using slow cooker.
  4. Add main ingredients: Add 20 ounces peeled and cubed Russet potatoes, 1 tsp kosher salt, 1 tsp black pepper, 1 tsp garlic powder, a pinch of red pepper flakes, 1 cup frozen sweet corn, and 2 cups chopped cooked rotisserie chicken to the pot.
  5. Cook the soup: For Instant Pot, secure lid with valve sealing, press SOUP button set for 4 minutes, then let natural release for 5 minutes before quick releasing steam. For slow cooker, cover and cook on low for 3-4 hours until potatoes are fork tender.
  6. Temper milk: Pour about a cup of hot soup into 3 cups milk to temper it, then pour the milk mixture back into the pot or slow cooker.
  7. Make cornstarch slurry: In a small bowl, mix 3 Tbsp cornstarch with 1/4 cup cold water until smooth.
  8. Thicken soup: For Instant Pot, turn sauté setting back on and stir in the cornstarch slurry. Cook for 5-10 minutes, stirring frequently until soup thickens. For slow cooker, stir slurry into soup and cook on high without lid for 15-20 minutes until thickened.
  9. Serve: Ladle soup into bowls and top with crumbled bacon for garnish. Enjoy your warm and hearty Snow Day Soup!

  • Bacon can be cooked in an air fryer for extra crispiness and less mess.
  • Tempering the milk prevents curdling when added to hot soup.
