Spiced Apple Syrup

  • 6 medium apples (a mix of Granny Smith and Gala)
  • 2 tbsp lemon juice
  • 1 cup water
  • ¼ cup maple syrup (77g)
  • 3 cinnamon sticks
  • ¼ tsp ground cinnamon
  • ¼ tsp freshly grated nutmeg
  • ⅛ tsp allspice
  • ¼ tsp freshly grated ginger
  • 1 tsp vanilla extract

For Each Soda

  • 1 cup ice
  • 7.5 ounces sparkling water
  • 2 tbsp heavy whipping cream (adjust to taste)

Instructions

  1. Make Spiced Apple Syrup: Core and slice the apples, then place them into a blender. Add lemon juice and water, and blend until smooth. Strain the blended mixture through a fine mesh sieve into a medium saucepan to extract the juice and remove pulp.
  2. Cook the Syrup: Add maple syrup, cinnamon sticks, ground cinnamon, freshly grated nutmeg, allspice, and freshly grated ginger to the apple juice in the saucepan. Simmer over medium-low heat for 20-30 minutes until the mixture has reduced to about one-half to one-third of its original volume, intensifying the flavors.
  3. Finish the Syrup: Remove the saucepan from heat, take out the cinnamon sticks, and stir in the vanilla extract. Allow the syrup to cool to room temperature, then transfer into a storage bottle. Refrigerate for up to two months.
  4. Assemble the Soda: In a glass, pour 2 tablespoons of the chilled spiced apple syrup. Add 1 cup of ice, then gently pour in 7.5 ounces of sparkling water. Stir gently to combine.
  5. Add Cream: Top the soda with 2 tablespoons of heavy whipping cream, adding more or less to taste, for a rich and creamy finish. Serve immediately and enjoy!
