Ingredients

Scale

Vegetables

  • 1 small onion, sliced
  • 2 pounds squash (yellow squash and zucchini), sliced into ¼-inch pieces

Cooking Fats & Seasonings

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste

Topping

  • ⅓ cup seasoned bread crumbs
  • ¼ cup grated Parmesan cheese
  • ¼ cup shredded cheddar cheese
  • 2 tablespoons melted butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare it for baking the casserole.
  2. Prepare Squash: Slice the yellow squash and zucchini into ¼-inch thick slices to ensure even cooking.
  3. Sauté Onions and Squash: In a large skillet over medium heat, cook the sliced onion in butter and olive oil until tender. Then increase heat to medium-high, add the sliced squash along with Italian seasoning, salt, and pepper. Cook for 5 to 6 minutes until the squash is tender-crisp.
  4. Arrange in Baking Dish: Grease a 2-quart baking dish and arrange the cooked squash and onions with the squash slices standing on their sides for a nice presentation and even cooking.
  5. Prepare Topping: In a small bowl, combine the seasoned bread crumbs, grated Parmesan, shredded cheddar cheese, and melted butter. Sprinkle this mixture evenly over the arranged squash and onions.
  6. Bake the Casserole: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the squash is tender and the topping is golden brown and bubbly.

Notes

  • You can substitute bread crumbs with gluten-free crumbs if you prefer a gluten-free dish.
  • For added flavor, consider adding a pinch of garlic powder or fresh herbs like thyme or parsley to the squash mixture.
  • Use a mix of cheddar and mozzarella cheese for a creamier topping.
  • Allow the casserole to rest for 5 minutes after baking before serving to help it set.
