Oats Mixture
- 1 cup old fashioned oats

- ¼ tsp pure vanilla extract
Strawberries
- 1 ¼ cups frozen strawberries
Topping
- 5 oz dairy-free yogurt
Instructions
- Combine dry ingredients: In a large bowl, combine the oats, chia seeds, and protein powder if using. Whisk well to ensure everything is evenly mixed.
- Add wet ingredients and refrigerate: Stir in the dairy-free milk, 1 tablespoon of maple syrup, and the vanilla extract. Cover the bowl and place it in the refrigerator for 2 to 3 hours to allow the oats and chia seeds to absorb the liquid and thicken.
- Heat strawberries: Place the frozen strawberries in a microwave-safe bowl and microwave on high for 2 minutes. After this, cut the berries into smaller bite-sized pieces. Continue microwaving for another 2 to 3 minutes, stopping every 30 seconds to check that the mixture is bubbling and the liquid has reduced by about a quarter. Add another tablespoon of maple syrup if additional sweetness is desired. Cover and chill in the fridge until ready to assemble.
- Assemble the jars: Spoon 2 to 3 tablespoons of the thickened oats into a jar. Add a spoonful of the cooked strawberry mixture on top, then layer more oats, and finally a spoonful of dairy-free yogurt. Repeat this layering with the remaining oats and strawberries to fill the jars.
- Storage and serving: This recipe makes about two 8-ounce jars or four 4-ounce jars. Store the assembled jars in the refrigerator for up to 5 days. Enjoy chilled as a nutritious breakfast or snack.
