Brownie Batter
- 15.25 oz Strawberry Cake Mix
- 1/3 cup vegetable oil
- 2 whole large eggs
- 1/2 cup white chocolate chips
Vanilla Buttercream Frosting
- 1/2 cup butter, softened
- 2–3 cups powdered sugar (approximately)
- 2 tablespoons milk (approximately)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven: Set your oven to 350º F (175º C) and line an 8 or 9 inch baking pan with parchment paper or grease and flour it thoroughly to prevent sticking.
- Prepare the batter: In a mixing bowl, combine the strawberry cake mix, vegetable oil, and eggs, stirring until the mixture is smooth and well blended. The batter will be quite thick.
- Add white chocolate chips: Fold the white chocolate chips into the batter evenly to distribute the sweetness throughout.
- Bake the brownies: Pour the batter into the prepared baking pan and bake for 20-25 minutes. Check doneness by inserting a tester; it should come out mostly clean but may have a few moist crumbs.
- Cool the brownies: Remove the pan from the oven and let the brownies cool completely before frosting to ensure the frosting does not melt.
- Make the frosting: Using a mixer, cream the softened butter until fluffy. Add the vanilla extract, milk, and half of the powdered sugar, mixing well. Gradually add more powdered sugar until you reach a spreadable consistency. Adjust with milk or powdered sugar as needed.
- Frost the brownies: Spread the prepared vanilla buttercream frosting evenly over the cooled brownies.
Notes
- You can substitute white chocolate chips with regular chocolate chips or even freeze-dried strawberries for an extra burst of flavor.
- Make sure the brownies are completely cooled before frosting to prevent the frosting from melting.
- For firmer frosting, refrigerate the frosted brownies for about 30 minutes before serving.
