This Street Corn Brussels Sprouts recipe combines the flavors of Mexican street corn with crispy Brussels sprouts for a delicious and unique side dish.

For the Brussels Sprouts:
- 1 lb. brussels sprouts, trimmed and halved
- 1 tbsp olive oil
- Salt to taste
For the Corn:
- 1 bag of Trader Joe’s Mexican style roasted corn
Additional:
- Lime wedges for serving
- 1 tbsp chopped cilantro, optional
Instructions
- Prepare Brussels Sprouts: In a bowl, combine Brussels sprouts with olive oil and salt. Add to air fryer basket and air fry at 380º for 6 minutes. Toss, then air fry another 4-7 minutes or until crispy.
- Cook Corn: Cook corn in a skillet according to package instructions.
- Combine: When done cooking, combine the corn with crispy Brussels sprouts. Mix in the cotija cheese packet that comes with the corn. Top with cilantro and serve with lime wedges. Enjoy!
