Description

This Sugar Cookie Baked Oats recipe is a wholesome, gluten-free breakfast treat that combines the comforting flavors of cinnamon and vanilla with the nostalgic taste of sugar cookies. Made with gluten-free oats and naturally sweetened with coconut sugar, this baked oatmeal is hearty, delicious, and topped with a simple powdered sugar glaze to finish.

Ingredients

Scale

Oats Base

  • 1 cup gluten free old fashioned rolled oats
  • 3/4 cup oat milk (or any preferred milk)
  • 1 tbsp coconut sugar (or any sugar of choice)
  • 1 tbsp vanilla protein powder (optional; can substitute with 1/2 tsp vanilla extract if omitted)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Icing

  • 12 tbsp powdered sugar
  • Tiny splash of milk

Instructions

  1. Prepare Ingredients: Gather all ingredients including gluten-free oats, oat milk, coconut sugar, vanilla protein powder, cinnamon, vanilla extract, and baking powder.
  2. Blend Ingredients: In a blender, combine the oats, oat milk, coconut sugar, protein powder (or vanilla extract), cinnamon, vanilla extract, and baking powder. Blend until the mixture is smooth and evenly combined, creating a batter-like consistency.
  3. Grease Baking Dish: Lightly grease a small baking dish to prevent sticking and ensure easy removal of the baked oats.
  4. Pour Batter: Pour the blended oat mixture into the greased baking dish and spread evenly.
  5. Bake: Place the baking dish in a preheated oven at 400°F (204°C). Bake for 18-20 minutes, or until the edges are set and the center is cooked through.
  6. Prepare Icing: While the oats bake, mix 1-2 tablespoons of powdered sugar with a tiny splash of milk until you achieve a smooth, drizzleable consistency.
  7. Cool and Glaze: Once baked, remove the oats from the oven and allow to cool slightly. Drizzle the prepared icing over the top before serving.

Notes

  • Adjust sweetness by varying the amount of coconut sugar and powdered sugar glaze.
  • This recipe is naturally gluten-free if certified gluten-free oats are used.
  • Protein powder is optional but adds extra nutrition and flavor.
