For the Beef:
- 12 ounces of flank steak (or chuck roast or London broil)
- 1 to 1½ teaspoons of baking soda
- Salt and pepper (to taste)
For the Sauce:
- ½ cup of low-sodium chicken stock
- 1 tablespoon of cornstarch
- 1½ tablespoons of oyster sauce
- 1 tablespoon of Shaoxing wine
- 1 tablespoon of light soy sauce
- 1 teaspoon of dark soy sauce
- ½ teaspoon of brown sugar
- ½ teaspoon of sesame oil
- ⅛ teaspoon of white pepper
Other Ingredients:
- 1 green bell pepper, cut into thin strips
- ½ red bell pepper, cut into thin strips
- 1 medium onion, cut into thin strips
- 2 tablespoons of neutral oil
- ½ teaspoon of minced ginger
- 2 cloves of garlic
Instructions
- Slice and Prepare the Beef: Slice the beef into thin strips, velvet with baking soda, rinse, season with salt and pepper.
- Make the Sauce: Combine all sauce ingredients in a bowl and set aside.
- Cook the Beef: Sear the beef in a hot wok until browned, then set aside.
- Stir-Fry Vegetables: Cook onion, ginger, and garlic, add bell peppers, then add back the beef.
- Combine and Serve: Pour in the sauce, stir until thickened, and serve over rice.

- Make sure to pat the steak dry before slicing for better browning.
