Avocado Chocolate Mousse

- 1/2 tsp vanilla extract
- 1/4 cup maple syrup (or brown rice syrup, agave, coconut sugar, date sugar, honey, etc.; adjust to taste)
- 1/8 tsp salt
- 1/4 tsp brewed coffee (optional, or instant espresso/coffee powder)
Instructions
- Melt the chocolate chips: Use a microwave or create a double boiler by placing a heat-proof bowl over a pan of simmering water, ensuring the water does not touch the bowl. Stir the chocolate chips frequently until completely melted and smooth.
- Blend all ingredients: Combine the melted chocolate, ripe avocados, cocoa powder, milk, vanilla extract, maple syrup, salt, and brewed coffee in a food processor or blender. Blend until the mixture is smooth and creamy.
- Adjust flavor: Taste the mousse and modify the flavor by adding more vanilla extract or sweetener as desired to suit your palate.
- Chill and serve: Transfer the mousse to serving dishes and refrigerate for at least 30 minutes to allow it to set and chill before serving for a refreshing, rich dessert experience.
