Instructions
- Prepare baking sheet: Line a baking sheet with parchment paper and set aside to prevent sticking and make cleanup easy.
- Mix ingredients: In a medium bowl, combine biscoff spread, biscoff cookie crumbs, and cream cheese. Mix thoroughly until smooth and well incorporated.
- Shape truffles: Use your hands or a small scoop to form the mixture into 8-10 balls. Arrange them on the prepared baking sheet.
- Chill: Place the baking sheet with the balls into the freezer for 15-20 minutes to firm up. Alternatively, refrigerate for 30 minutes if you prefer.
- Melt chocolate: Melt the chocolate in the microwave in 30-second increments or use a double boiler on the stove. Stir in the melted coconut oil if using, for a smoother coating.
- Coat truffles: Using forks or spoons, dip each chilled ball into the melted chocolate, ensuring even coverage on all sides. Shake off excess chocolate.
- Set chocolate: Return the coated truffles to the baking sheet and chill again in the freezer for 10 minutes or in the refrigerator for 30 minutes until the chocolate is set.
- Store: Keep truffles in an airtight container in the refrigerator until ready to serve to maintain freshness.
