  • Author: Mariam
  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Description

This comforting Chicken Spaghetti casserole combines tender angel hair pasta with a creamy mixture of cooked chicken, cream of chicken soup, salsa, sour cream, and Mexican cheese. Topped with melted cheese and baked to bubbly perfection, it makes for an easy and satisfying family meal.

Ingredients

Scale

Pasta and Chicken

  • 8 ounces angel hair pasta (half of a 16-ounce box)
  • 2 cups chopped, cooked chicken

Wet Ingredients

  • 2 (10.5 ounce) cans cream of chicken soup
  • 1 cup salsa
  • 1/2 cup sour cream

Seasonings and Toppings

  • 1 tablespoon taco seasoning
  • 2 cups Mexican cheese blend (divided use: 1 cup mixed into the casserole, 1 cup for topping)
  • Dried parsley (optional, for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F and spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Cook Pasta: Boil the angel hair pasta according to package directions until al dente, then drain thoroughly.
  3. Combine Ingredients: Return the drained pasta to the pot. Add the chopped, cooked chicken, cream of chicken soups, salsa, sour cream, 1 cup of Mexican cheese blend, and taco seasoning. Stir well to combine all ingredients evenly; this may take a few minutes.
  4. Transfer to Baking Dish: Pour the combined pasta and chicken mixture into the prepared baking dish, spreading it out evenly.
  5. Add Cheese Topping: Sprinkle the remaining 1 cup of Mexican cheese blend evenly over the top of the casserole.
  6. Cover and Bake: Cover the dish with nonstick aluminum foil and bake in the preheated oven for about 25 minutes, or until the casserole is hot and bubbly.
  7. Garnish and Serve: Optionally, sprinkle dried parsley on top before serving for added color and flavor.

Notes

  • You can use any cooked chicken, including rotisserie or leftover chicken.
  • Angel hair pasta cooks quickly, so be careful not to overcook it during boiling.
  • The taco seasoning adds a slight Mexican flavor, but you can adjust the amount to your taste.
  • To make this dish spicier, choose a salsa with heat or add chopped jalapeños.
  • For a lighter version, use reduced-fat sour cream and reduced-fat cheese.
