Instructions

  1. Brew Coffee: Brew 3 tablespoons of espresso coffee and allow it to cool completely to room temperature before using.
  2. Crush Ladyfingers: Place the savoiardi biscuits in a blender or food processor and blitz until they reach a fine powder consistency, similar to coarse flour.
  3. Prepare Cream Mixture: In a mixing bowl, combine the mascarpone cheese and powdered sugar, then add the cooled espresso. Mix thoroughly to form a smooth and creamy mixture.
  4. Combine Mixture: Add the crushed ladyfingers to the mascarpone-espresso mixture. Using a rubber spatula, fold the mixture together until well combined into a thick, cookie dough-like batter.
  5. Shape Truffles: Scoop about a teaspoon of the mixture into your hands and roll it into a smooth ball. Place the formed truffle onto a plate and repeat with the remaining mixture, forming around 10 truffle balls.
  6. Chill: Refrigerate the truffle balls for at least 1 hour to set. For a firmer texture, chill for longer if desired.
  7. Coat with Cacao: Place cacao powder in a small bowl. Roll each chilled truffle into the cacao powder to coat evenly.
