For the Dip

  • 2 pints cherry tomatoes (like Wild Wonders)
  • 4 garlic cloves (minced)
  • 12 tablespoons chopped Calabrian peppers
  • 3 tablespoons fresh parsley (minced)
  • ½ tsp salt
  • ½ tsp freshly cracked pepper
  • ½ cup parmesan cheese (freshly grated)
  • ½ cup fresh basil (torn)
  • 8 oz burrata filling Stracciatella (commonly found at Trader Joe’s or Aldi)
  • About 2 tablespoons olive oil

For the Garlic Butter Baguette

  • 4 tablespoons softened butter
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh parsley (minced)
  • Baguette, sliced

Instructions

  1. Prepare garlic butter: In a small bowl, combine softened butter, minced garlic, and fresh parsley. Microwave or gently heat for about 10 seconds just to partially melt the butter. Set this mixture aside for later use.
  2. Mix tomatoes and seasonings: In a pie pan or oven-safe dish, add the cherry tomatoes. Drizzle with about 2 tablespoons of olive oil. Add minced garlic, chopped Calabrian peppers, minced parsley, salt, and freshly cracked pepper. Stir gently to coat the tomatoes evenly with the seasonings and oil.
  3. Roast tomatoes: Preheat your oven to 425°F (220°C). Place the pie pan with the tomatoes into the oven and roast for 25 minutes. The tomatoes should become wrinkled and soft, able to burst easily when pressed with a fork.
  4. Prepare garlic baguette slices: While the tomatoes roast, slice the baguette into pieces. Brush each slice generously with the prepared garlic butter mixture. Arrange the slices on a parchment-lined baking sheet.
  5. Toast the baguette: Place the prepared baguette slices in the oven and bake for 8-10 minutes or until they turn golden brown and crisp.
  6. Combine and finish dip: Once the tomatoes are roasted, immediately add the grated parmesan cheese, torn fresh basil leaves, and burrata filling (Stracciatella) to the warm tomato mixture. Stir gently to combine and warm through without breaking up the cheese too much.
  7. Serve: Spoon the tomato burrata dip into a serving dish and serve hot alongside the warm, garlic butter toasted baguette slices for dipping.

Notes

  • Stracciatella is the creamy filling inside burrata cheese and imparts a rich texture to the dip. If unavailable, you can substitute with fresh mozzarella mixed with cream cheese for a similar effect.
  • Adjust the amount of Calabrian peppers to control the spiciness of the dip.
  • This dip is best served warm to enjoy the contrast of roasted tomatoes and creamy burrata.
