Ingredients
Scale
For Sandwich:
- 8 Bread Slices
- 3 tbsp Butter
- 2 Eggs
- Salt to taste
- Pepper to taste
- 1/2 Onion, thinly sliced
- 1/2 Tomato, thinly sliced
- 1 tsp Oil
Veggie Filling:
- 1/2 cup Grated Carrot
- 3 tbsp Finely chopped Onion
- 1/2 cup Thinly sliced Cabbage
- 3 tbsp Finely chopped Capsicum (Bell Peppers)
- 1 Green Chilli, finely chopped
- 3 to 4 tbsp Mayonnaise
- Salt to taste
- Pepper to taste
- 1/4 tsp Sugar
Chicken Filling:
- 1 1/2 cup Cooked and shredded Chicken
- 3 to 4 tbsp Mayonnaise
- Salt to taste
- Pepper to taste
- 1 tsp Red Pepper Sauce
Instructions
- Prepare Fillings: Mix the veggie filling ingredients together in one bowl and mix the chicken filling ingredients in a separate bowl. Set both aside to allow flavors to meld.
- Cook the Egg: Heat oil in a small pan over medium heat, crack in an egg, season with salt and pepper, cook and then flip to cook the other side until done. Remove the cooked egg and set aside.
- Assemble Sandwich Layers: Take one bread slice, lightly butter it, spread the vegetable filling over it, then cover with another buttered bread slice. Add the cooked egg on top, layer a few slices of onion and tomato, then cover with another buttered bread slice. Spoon the chicken filling onto this, then top with the final buttered bread slice.
- Set the Sandwich: Wrap the assembled sandwich tightly in foil and let it sit for 15 minutes to allow the flavors to marry and bread to soften slightly.
- Cut and Serve: Remove the foil and cut the sandwich into triangles. Serve immediately for best taste.
Notes
- Mayonnaise can be store-bought or homemade, but make sure it complements the other flavors.
- The resting time helps the sandwich layers meld nicely and makes it easier to cut.
- You can customize the fillings with additional veggies or proteins if desired.
- Use fresh bread for best texture and taste.
- Serve with chips, pickles, or a side salad for a complete meal.
