- 6 tbsp drippings from turkey roasting pan
- 6 tbsp all-purpose flour
- 4 cups low sodium chicken broth or stock
- Salt, to taste

Instructions
- Heat Drippings: Place the roasting pan with the turkey drippings on the stove over medium heat. If possible, use a burner that fits the pan across two burners to distribute heat evenly. Leave any garlic, onion, or other flavorings in the pan to add depth to the gravy.
- Add Flour: When the drippings start to sizzle and bubble, sprinkle in the flour. Cook for 1 minute, stirring constantly to form a roux and remove the raw flour taste.
- Incorporate Broth: Gradually pour in the chicken broth while continuously stirring to avoid lumps. If lumps form, use a whisk to break them up, ensuring the gravy becomes smooth.
- Simmer and Thicken: Allow the gravy to simmer until it thickens to your desired consistency. Keep in mind the gravy will thicken further as it cools. Season with salt and pepper at the very end to taste.
- Strain Gravy: Pour the gravy through a fine sieve or strainer into a bowl, pressing the solids from the garlic, onion, and flavorings to extract all the juices. Discard the solids.
- Serve: Transfer the strained gravy into a jug or serving container and serve warm alongside roasted turkey. To keep warm for longer, store the gravy in a thermos.
