Puff Pastry:

Blueberry Filling:

- 50g caster or granulated sugar
- 2 tablespoons cornstarch or cornflour
- 2 teaspoons lemon juice
Glaze:
- 50g icing sugar
Instructions
- Preheat the oven: Pre-heat oven to 180°C fan and line 2 baking trays with grease-proof paper.
- Prepare the pastry: Unroll the puff pastry sheets and flatten out any wrinkles. Cut out ghost shapes using a cookie cutter or a template.
- Prepare the filling: Cook blueberries, sugar, cornstarch, and lemon juice until thickened. Allow to cool.
- Assemble the pies: Spoon blueberry filling onto half of the ghost shapes. Top with remaining shapes, crimp the edges, and brush with dairy-free milk and sugar.
- Bake: Bake the pies until golden and flakey, about 15-18 minutes.
- Glaze: Mix icing sugar and lemon juice, then drizzle over the pies.
- Serve: Allow the glaze to set before enjoying!
