These Viral TikTok Baked Salmon Sushi Cups offer a delightful twist on traditional sushi by baking seasoned salmon and sushi rice inside nori cups. Perfect as a fun appetizer or a tasty snack, these sushi cups combine the rich flavors of soy-marinated salmon with tangy rice vinegar and creamy mayo, finished with sesame seeds and green onions for a burst of freshness.
Ingredients
Scale
For the Sushi Cups:
- 1 ½ Pounds Salmon, skin removed and cubed
- 1 Pinch Sea Salt
- 2 Tablespoons Soy Sauce or Coconut Aminos
- 2 Tablespoons Kewpie Mayo or homemade mayo
- 1 ½ Cups Cooked Sushi Rice
- 1 Teaspoon Rice Vinegar
- 12 Nori Squares
For the Garnishes:
- 1 Squeeze Kewpie Mayo
- 1 Tablespoon Sesame Seeds
- ¼ Cup Green Onions, chopped
Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 400°F (204°C) and lightly grease a standard-size muffin tin to prevent sticking.
- Marinate the Salmon: In a large bowl, combine the cubed salmon, a pinch of sea salt, soy sauce, and Kewpie mayo. Toss thoroughly until the salmon is evenly coated with the marinade.
- Season the Rice: In another bowl, mix the cooked sushi rice with rice vinegar, stirring well until the rice is fully coated to give it its characteristic tangy flavor.
- Prepare Nori Squares: Lay out the nori sheets on a clean surface. If using large sheets, cut them into squares sized to fit neatly into each muffin tin cavity.
- Form Rice Cups: Place about 2-3 tablespoons of the seasoned rice onto each nori square. Fold the nori around the rice and carefully place each shaped cup into the muffin tin cavities. Repeat until all cavities are filled.
- Add Salmon Topping: Spoon approximately 2 tablespoons of the marinated salmon mixture on top of each rice-filled nori cup, distributing evenly.
- Bake the Sushi Cups: Bake in the preheated oven for 15 minutes or until the salmon is cooked to your preferred doneness.
- Garnish and Serve: Remove cups from the oven and let them cool slightly. Top each cup with a squeeze of Kewpie mayo, sprinkle with sesame seeds, and chopped green onions. Serve immediately for best taste.
Notes
- Best eaten the same day for optimal texture and freshness.

- Kewpie mayo adds a unique creamy flavor but can be substituted with regular mayo if unavailable.
- You can use coconut aminos as a soy-free alternative.
- Be careful when removing sushi cups from the muffin tin as they can be fragile when warm.
