  • 1/4 cup shredded coconut, plus 3 tablespoons, divided
  • 1/2 cup creamy almond butter
  • 3 tablespoons pure maple syrup
  • 2 large soft medjool dates, pitted*
  • 1 teaspoon pure vanilla extract
  • 1/2 cup old fashioned rolled oats
  • 1 scoop vanilla protein powder, or unflavored
  • 1/4 teaspoon kosher salt
  • 1 tablespoon chia seeds

For the melted chocolate:

  • 1/2 cup chocolate chips
  • 1/2 teaspoon coconut oil

Instructions

  1. Preheat oven and toast coconut: Preheat oven to 350 degrees F. Toast shredded coconut on a lined baking sheet for 5 minutes until lightly golden. Let cool.
  2. Prepare protein ball mixture: In a food processor, combine almond butter, maple syrup, dates, vanilla, oats, protein powder, and salt. Process until smooth.
  3. Form protein balls: Transfer mixture to a bowl, add toasted coconut, chia seeds, and chocolate chips. Shape into balls.
  4. Melt chocolate: Melt chocolate chips and coconut oil in the microwave.
  5. Coat balls in chocolate: Dip balls in melted chocolate, place on parchment-lined tray, and drizzle with more chocolate. Sprinkle with coconut and sea salt.
  6. Chill and enjoy: Refrigerate balls for about 1 hour until chocolate sets. Enjoy these delicious protein-packed treats!
