For the protein balls:
- 1/4 cup shredded coconut, plus 3 tablespoons, divided
- 1/2 cup creamy almond butter
- 3 tablespoons pure maple syrup
- 2 large soft medjool dates, pitted*
- 1 teaspoon pure vanilla extract
- 1/2 cup old fashioned rolled oats
- 1 scoop vanilla protein powder, or unflavored
- 1/4 teaspoon kosher salt
- 1 tablespoon chia seeds
For the melted chocolate:
- 1/2 cup chocolate chips
- 1/2 teaspoon coconut oil
Instructions
- Preheat oven and toast coconut: Preheat oven to 350 degrees F. Toast shredded coconut on a lined baking sheet for 5 minutes until lightly golden. Let cool.
- Prepare protein ball mixture: In a food processor, combine almond butter, maple syrup, dates, vanilla, oats, protein powder, and salt. Process until smooth.
- Form protein balls: Transfer mixture to a bowl, add toasted coconut, chia seeds, and chocolate chips. Shape into balls.
- Melt chocolate: Melt chocolate chips and coconut oil in the microwave.
- Coat balls in chocolate: Dip balls in melted chocolate, place on parchment-lined tray, and drizzle with more chocolate. Sprinkle with coconut and sea salt.
- Chill and enjoy: Refrigerate balls for about 1 hour until chocolate sets. Enjoy these delicious protein-packed treats!
