Ingredients
Scale
Strawberries
- 1 lb. strawberries (about 25 berries), room temperature
Chocolate Coating
- 1 oz. semisweet chocolate chips, finely chopped
- 2 1/2 tsp. vegetable shortening, divided
- 8 oz. white chocolate chips, finely chopped
Other
- Parchment paper
- 50 toothpicks
- Tall cup filled with warm water
- Piping bag or ziplock bag
Instructions
- Prepare strawberries: Wash strawberries thoroughly and dry completely to ensure melted chocolate adheres properly. Insert a toothpick into the center of the green stem at the top, pushing it about 3/4 through towards the base for easy handling during dipping.
- Melt semisweet chocolate: Place chopped semisweet chocolate and 1/2 teaspoon vegetable shortening in a microwave-safe bowl. Microwave at 30% power for 30 seconds, stir well, and repeat until smooth. If a few lumps remain, microwave for an additional 15 seconds at 30% power.
- Prepare piping bag: Spoon melted semisweet chocolate into an uncut piping bag and seal it. Place the sealed bag into a cup filled with warm water to keep it melted while preparing the white chocolate.
- Melt white chocolate: Combine chopped white chocolate and remaining 2 teaspoons vegetable shortening in a microwave-safe bowl. Microwave at 30% power for 30 seconds, stir, and repeat until completely melted and smooth, reducing the last heating interval to 15 seconds if lumps remain.
- Cut piping bag tip: Remove the semisweet chocolate piping bag from the warm water and dry the outside. Cut a small opening at the tip of the bag to pipe thin chocolate lines.
- Dip strawberries and decorate: Holding a strawberry by the toothpick, dip it almost to the top in white chocolate, swirling to coat thoroughly. Lift and allow excess to drip off. Hold the strawberry horizontally over parchment paper and pipe 4-5 thin, parallel semisweet chocolate stripes across one side. Using a clean toothpick, drag through the stripes perpendicular to create a toothed pattern. Set the decorated strawberry on parchment with pattern facing up.
- Repeat and set: Continue dipping and decorating remaining strawberries. Allow all to sit undisturbed for approximately 30 minutes to let the chocolate harden completely before serving.
Notes
- Ensure strawberries are completely dry before dipping to prevent chocolate from seizing or sliding off.
- Use vegetable shortening to help chocolates melt smoothly and create a shiny finish.
- Keep melted semisweet chocolate warm by placing the piping bag in warm water until ready to pipe.
- If chocolate begins to harden while working, gently reheat in short bursts in the microwave at low power.
- Store finished strawberries in a cool place and serve within a few hours for best freshness.
