Ingredients
Scale
Sauce Base
- 4–5 cloves garlic, minced or roasted
- 2 tbsp butter or olive oil
- ¾ cup heavy cream, milk, or plant-based milk
Cheese (Optional)
- ¼ cup grated Parmesan or Pecorino cheese (optional)
Seasonings
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- Pinch of nutmeg (optional)
- Fresh or dried herbs (thyme, basil, oregano – optional)
Vegan Options
- Use almond, oat, or cashew milk
- Omit cheese or substitute with vegan Parmesan
Extra Cheese Options
- Add mozzarella, fontina, or more Parmesan
Instructions
- Prepare garlic and aromatics: Roast or sauté the minced garlic until fragrant, being careful not to burn it. Optionally, you can also sauté onions or shallots for added depth of flavor.
- Melt butter or heat oil: In a saucepan over medium-low heat, melt the butter or warm the olive oil gently to avoid browning too quickly.
- Add garlic: Stir in the prepared garlic and cook for 1–2 minutes until aromatic, making sure it does not brown to prevent bitterness.
- Add cream or milk: Slowly pour in the heavy cream, milk, or plant-based milk while whisking continuously to create a smooth blend.
- Incorporate cheese (optional): Gradually add the grated Parmesan or Pecorino cheese to the sauce, whisking until melted and fully integrated to thicken and enrich the flavor.
- Season: Add salt, black pepper, nutmeg, and fresh or dried herbs as desired. Taste the sauce and adjust the seasonings gradually according to your preference.
- Blend (optional): For an extra smooth consistency, use an immersion blender to blend the sauce until silky.
- Adjust consistency: If the sauce is too thick, thin it with additional milk or broth to achieve a pourable texture. Alternatively, simmer the sauce gently to thicken it further for a pizza base.
- Use immediately or store: Spread the sauce directly on your pizza crust, drizzle over pasta, or refrigerate/freeze for future use. Reheat gently before serving.
Notes
- Toasting or roasting garlic before adding it will mellow its flavor and add richness to the sauce.
- Use plant-based milk and vegan cheese alternatives to make the sauce vegan-friendly.
- Adjust the thickness based on your desired use – thinner for drizzling, thicker for pizza bases.
- The sauce can be stored in the refrigerator for up to 3 days or frozen for up to 1 month.
- Adding extra cheese varieties like mozzarella or fontina can give the sauce a more indulgent taste and gooey texture.
- Be cautious not to overheat the sauce after adding cream to prevent curdling.
