Instructions

  1. Prepare garlic and aromatics: Roast or sauté the minced garlic until fragrant, being careful not to burn it. Optionally, you can also sauté onions or shallots for added depth of flavor.
  2. Melt butter or heat oil: In a saucepan over medium-low heat, melt the butter or warm the olive oil gently to avoid browning too quickly.
  3. Add garlic: Stir in the prepared garlic and cook for 1–2 minutes until aromatic, making sure it does not brown to prevent bitterness.
  4. Add cream or milk: Slowly pour in the heavy cream, milk, or plant-based milk while whisking continuously to create a smooth blend.
  5. Incorporate cheese (optional): Gradually add the grated Parmesan or Pecorino cheese to the sauce, whisking until melted and fully integrated to thicken and enrich the flavor.
  6. Season: Add salt, black pepper, nutmeg, and fresh or dried herbs as desired. Taste the sauce and adjust the seasonings gradually according to your preference.
  7. Blend (optional): For an extra smooth consistency, use an immersion blender to blend the sauce until silky.
  8. Adjust consistency: If the sauce is too thick, thin it with additional milk or broth to achieve a pourable texture. Alternatively, simmer the sauce gently to thicken it further for a pizza base.
