Blueberry Yogurt Mixture

  • 1 cup fresh blueberries
  • 1/2 cup chopped walnuts
  • 3/4 cup 2-5% vanilla Greek yogurt

Instructions

  1. Prepare the Blueberry Yogurt Mixture: Begin by lining a baking sheet with parchment paper to prevent sticking. In a medium bowl, mix together the fresh blueberries, chopped walnuts, and vanilla Greek yogurt until everything is well combined. This mixture will form the base of your clusters.
  2. Form and Freeze the Clusters: Using a spoon, scoop approximately 2 tablespoons of the blueberry yogurt mixture to form individual clusters. Place each cluster onto the prepared baking sheet, leaving some space between each one. Transfer the baking sheet to your freezer and allow the clusters to freeze for 1 to 1.5 hours, or until they are firm.
  3. Melt the Chocolate Coating: About 10 minutes before the clusters are done freezing, start melting the chocolate chips and coconut oil. Place them in a microwave-safe bowl and heat in 30-second increments, stirring in between, until the chocolate is fully melted and smooth. Let the melted chocolate cool for about 5 minutes, ensuring it’s not too hot to melt the yogurt clusters.
  4. Coat the Clusters with Chocolate: Once the yogurt clusters are firm, remove them from the freezer. Using two forks, carefully dip each frozen cluster into the melted chocolate, ensuring it’s fully coated. Place the coated clusters back onto the parchment-lined baking sheet. If desired, sprinkle each cluster with a bit of flaky sea salt to enhance the flavors.
  5. Set the Chocolate and Store: After coating all the clusters, return them to the freezer or refrigerate for an additional 10 minutes to allow the chocolate shell to harden. Once set, enjoy the clusters immediately. For storage, place any leftovers in an airtight container in the refrigerator for up to one week. While they can also be stored in the freezer, note that the yogurt will become very hard, and you’ll need to thaw them before eating.
