These Air Fryer Caprese Portobello Mushrooms are a delicious and quick appetizer or light meal, combining juicy portobello mushrooms with fresh mozzarella, tomatoes, and basil, all perfectly cooked in the air fryer for a melty, flavorful treat with a balsamic glaze finish.

Mushroom Preparation
- 1 large clove garlic, grated
- 2 tbsp. extra-virgin olive oil
- 1/2 tsp. kosher salt
- Freshly ground black pepper, to taste
- 4 portobello mushrooms (about 1 lb.), stems removed
Toppings
- 4 oz. low-moisture mozzarella, cut into small pieces (about 3/4 cup), divided
- 8 cherry or grape tomatoes, halved (about 1/2 cup), divided
- Torn fresh basil leaves, for serving
- Balsamic glaze, for drizzling
- Crushed red pepper flakes, for serving
Instructions
- Prepare the garlic oil mixture: In a small bowl, whisk together the grated garlic, extra-virgin olive oil, kosher salt, and several grinds of freshly ground black pepper until well combined. This mixture will infuse the mushrooms with a rich, aromatic flavor.
- Brush mushrooms: Using a brush, coat all sides of the portobello mushrooms evenly with the garlic oil mixture to ensure they absorb the seasoning and cook to tender perfection.
- Air fry mushrooms – first round: Place two mushrooms in the air fryer basket, domed side up. Air fry at 400°F (204°C) for 7 to 9 minutes, flipping mushrooms halfway through cooking to domed side down, so they cook evenly and become tender.
- Add toppings and continue cooking: Carefully remove the air fryer basket and fill the mushroom caps with half of the mozzarella pieces and half of the halved tomatoes. Lightly season with salt. Return the mushrooms to the air fryer and cook at 400°F for an additional 2 to 3 minutes, or until the cheese is melted and golden in spots and the tomatoes are softened.
- Repeat with remaining mushrooms: Transfer the cooked mushrooms to a plate and repeat the cooking process with the remaining two mushrooms, cheese, and tomatoes.
- Serve with garnishes: Arrange the finished mushrooms on a serving platter. Top them with torn fresh basil leaves, drizzle with balsamic glaze, and sprinkle with crushed red pepper flakes for a vibrant and flavorful finish.
Notes
- Make sure to remove the portobello stems and gently wipe the caps clean before seasoning to remove any dirt.
- You can substitute balsamic glaze with a balsamic reduction or a drizzle of aged balsamic vinegar if preferred.
- If you prefer a stronger garlic flavor, you may add an extra clove or increase the amount of grated garlic in the oil mixture.
- These mushrooms are best served immediately while the cheese is warm and melty.
- For added texture, sprinkle some toasted pine nuts or breadcrumbs on top before serving.
