- 2 1/2 tsp. sweet pickle relish
- 1 1/2 tsp. Dijon mustard, divided
- 1 1/2 tsp. yellow mustard, divided
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Coating
- 1/2 cup (60 g) all-purpose flour
- 2 eggs, lightly beaten (from the 8 eggs, 6 cooked and 2 for coating)
- 1/2 cup finely ground Ritz cracker crumbs (about 15 to 20 crackers)
- 1/2 cup panko bread crumbs
- 1/4 tsp. garlic powder
- 1/2 tsp. dried parsley flakes
- Pinch of cayenne pepper (optional)
- 3/4 tsp. kosher salt (for coating mixture)
- 1/4 tsp. freshly ground black pepper (for coating mixture)
- Olive oil or other neutral cooking spray
- Ground paprika, for dusting
- Fresh dill, for serving
Instructions
- Cook the Eggs: Place 6 of the eggs in the air fryer basket. Air fry at 250°F for 17 minutes. Immediately transfer the hot eggs to an ice bath and let them sit until cool enough to peel.
- Prepare the Filling: Slice cooled eggs in half lengthwise and carefully scoop out the yolks into a medium bowl, setting aside the whites. Add mayonnaise, sweet pickle relish, 1 tsp. Dijon mustard, and 1 tsp. yellow mustard to the yolks. Mash and stir with a fork until the mixture is very smooth and creamy. Season with kosher salt and freshly ground black pepper. Transfer the yolk mixture to a piping bag or resealable plastic bag and refrigerate until ready to fill.
- Set up Coating Stations: Pour flour into a shallow bowl. In a second shallow bowl, beat the remaining 2 eggs with 1/2 tsp. Dijon mustard, 1/2 tsp. yellow mustard, and season with a pinch of salt and black pepper. In a third shallow bowl, combine finely ground Ritz cracker crumbs, panko bread crumbs, garlic powder, dried parsley flakes, cayenne pepper if using, 3/4 tsp. kosher salt, and 1/4 tsp. black pepper.
- Coat the Egg Whites: Working one egg white half at a time, dip each into the flour, then into the egg mixture, letting the excess drip off. Generously coat each in the panko and cracker crumb mixture, pressing gently to help the coating adhere. Place coated egg whites on a baking sheet and spray both sides lightly with olive oil or cooking spray to promote crispiness.
- Air Fry the Coated Eggs: Arrange the coated egg whites in the air fryer basket in a single layer without overcrowding. Air fry at 390°F for 8 to 10 minutes, turning eggs halfway through to ensure even golden crispiness. Remove and let them cool slightly.
- Assemble and Serve: Arrange the crispy egg white halves on a serving platter. Pipe or spoon the creamy yolk filling into the egg whites. Dust with ground paprika and garnish with fresh dill. Serve immediately for best texture and flavor.
Notes
- Use fresh eggs for best peeling results after air frying.
- Be careful when transferring hot eggs to the ice bath to avoid burns.
- For a spicier filling, add a dash of hot sauce or cayenne to the yolk mix.
- Ensure eggs are spaced properly in the air fryer basket to allow air circulation and crisping.
- Use a small piping tip or snip the corner of the bag for neat filling presentation.
- Crispy deviled eggs are best served soon after cooking; if storing, keep the filling and whites separate to maintain crispness.
