Wet Ingredients

  • 5 tablespoons cold, unsalted butter, preferably European style
  • 1 cup whole milk

Instructions

  1. Prepare dry ingredients and cut in butter: Preheat oven to 425°F. Sift flour, baking powder, sugar, and salt into a large bowl. Transfer to a food processor, add cold butter cut into pats, then pulse 5-6 times until the mixture resembles rough crumbs. Alternatively, cut butter into dry ingredients with a fork or pastry cutter.
  2. Add milk and form dough: Return mixture to bowl, add milk, and stir with a fork until it forms a rough ball of dough.
  3. Fold and rest dough: Turn dough onto a floured surface and pat into a rough rectangle about 1 inch thick. Fold over, pat again, and repeat two more times to create layers. Cover loosely with a kitchen towel and let rest for 30 minutes.
  4. Shape biscuits: Gently pat dough to roughly a 10 x 6-inch rectangle. Cut biscuits with a floured biscuit cutter or glass. Avoid twisting the cutter to preserve biscuit rise.
  5. Bake: Arrange biscuits on a cookie sheet and bake for 10-15 minutes until golden brown.

  • Do not twist the biscuit cutter to ensure biscuits rise properly.
