Apple Cobbler Recipe

Introduction

Apple Cobbler is a classic, comforting dessert featuring tender, spiced apples beneath a soft, golden batter. Perfect for chilly evenings, it’s delicious served warm with a scoop of vanilla ice cream or enjoyed on its own.

A white scalloped ceramic baking dish holds a warm apple cobbler with two scoops of melting vanilla ice cream on top, placed slightly left of center. The cobbler features a golden-brown, slightly textured crust with swirls of cinnamon, covering a visible layer of soft, cooked apple slices browned with cinnamon and sugar, mainly visible on the top right side where a piece has been scooped out. The surrounding edges of the crust appear caramelized and slightly crispy. The dish sits on a white marbled surface with a red apple partially visible in the background. Ingredients

  • 2 Tablespoons (28g) unsalted butter
  • 8 cups (about 1kg) peeled and sliced apples (1/4-inch slices; about 7 apples)
  • 3 Tablespoons (37g) packed light or dark brown sugar
  • 1 Tablespoon fresh squeezed lemon juice
  • 1 Tablespoon all-purpose flour
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 6 Tablespoons (85g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 and 3/4 cups (219g) all-purpose flour (spooned & leveled)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Optional: 1 Tablespoon granulated sugar + 1/2 teaspoon cinnamon, for sprinkling

Instructions

  1. Step 1: Preheat the oven to 350°F (177°C). Lightly grease a 9×13-inch baking pan or any 3–4-quart baking dish.
  2. Step 2: Melt 2 Tablespoons of butter in a medium saucepan over medium heat. Add the sliced apples, brown sugar, lemon juice, flour, cinnamon, allspice, and nutmeg. Cook, stirring, for about 5 minutes until the apples are coated and starting to soften. Transfer this mixture to the prepared baking pan.
  3. Step 3: In a medium bowl, whisk together the melted butter and granulated sugar. Add the buttermilk, vanilla extract, flour, baking powder, and salt. Whisk until combined and mostly smooth; small lumps are fine.
  4. Step 4: Pour and spread the batter evenly over the apple filling. Sprinkle the optional cinnamon-sugar mixture evenly on top, if using. Use a butter knife to gently swirl the topping to blend with the apples as best as you can.
  5. Step 5: Bake on the center rack for 48 to 55 minutes, until the topping is golden and the apple filling bubbles around the edges. If the top browns too quickly, loosely cover with foil halfway through baking.
  6. Step 6: Remove from the oven and let cool on a rack for at least 5 minutes before serving.
  7. Step 7: Serve warm, at room temperature, or cold. It’s delicious alone or topped with vanilla ice cream and salted caramel sauce.

Tips & Variations

  • Use tart apple varieties like Granny Smith for a balanced sweetness and firmer texture.
  • For a richer flavor, substitute some of the buttermilk with plain yogurt.
  • Try adding chopped nuts or raisins to the apple mixture for extra texture.
  • If you don’t have buttermilk, mix 1 tablespoon of lemon juice or vinegar into a cup of milk and let it sit for 5 minutes.

Storage

Cover leftovers tightly and store in the refrigerator for up to 5 days. Reheat individual portions in the microwave or warm the whole dish covered in a 300°F (149°C) oven for about 20 minutes until heated through.

How to Serve

Three white scalloped plates each hold a serving of apple cobbler with a golden-brown baked crust that has a rough, crumbly texture on top. Underneath the crust is a warm layer of soft, cinnamon-spiced apple slices in a glossy caramel sauce that slightly spills onto the plates. Each cobbler portion is topped with a round scoop of creamy white vanilla ice cream, starting to melt down the warm dessert. Two silver spoons rest beside two of the plates. In the top right, a white fluted baking dish filled with the same apple cobbler is partially visible, showing a bubbly, browned crust. Nearby, a fresh red and yellow apple with green leaves and a small glass jar of caramel sauce with a spoon inside add to the rustic setting on a white marbled surface. A light pink cloth with subtle texture is casually placed on the right side. Photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use frozen apples for this recipe?

It’s best to use fresh apples because frozen ones can become mushy and watery during cooking, which might affect the cobbler’s texture.

Can I make this cobbler ahead of time?

Yes, you can prepare the apple filling and topping separately in advance. Keep them refrigerated, then assemble and bake just before serving for best results.

Scale

Apple Filling

  • 2 Tablespoons (28g) unsalted butter
  • 8 cups (about 1kg) peeled and sliced apples (1/4-inch slices; about 7 apples)
  • 3 Tablespoons (37g) packed light or dark brown sugar
  • 1 Tablespoon fresh squeezed lemon juice
  • 1 Tablespoon all-purpose flour
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg

Topping

  • 6 Tablespoons (85g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 and 3/4 cups (219g) all-purpose flour (spooned & leveled)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Optional Topping

  • 1 Tablespoon granulated sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat and prepare baking pan: Preheat your oven to 350°F (177°C). Lightly grease a 9×13-inch baking pan or any 3–4-quart baking dish to prevent sticking.
  2. Pre-cook the apples: Melt 2 Tablespoons of unsalted butter in a medium saucepan over medium heat. Add the peeled and sliced apples, brown sugar, fresh lemon juice, all-purpose flour, ground cinnamon, allspice, and nutmeg. Stir occasionally and cook for about 5 minutes until the apples become coated in the spiced mixture and begin to soften.
  3. Transfer apple filling: Once softened, transfer the apple mixture evenly into the prepared baking dish to form the base layer.
  4. Make the cobbler topping: In a medium bowl, whisk together melted butter and granulated sugar until combined. Add the buttermilk, vanilla extract, all-purpose flour, baking powder, and salt, mixing until mostly smooth with some small lumps allowed.
  5. Assemble topping on apples: Pour and spread the batter evenly over the apple layer in the baking dish. If desired, sprinkle the optional cinnamon-sugar mixture evenly on top and gently swirl with a butter knife for a marbled effect without disturbing the apple layer too much.
  6. Bake the cobbler: Place the baking dish on the center rack of the preheated oven and bake for 48-55 minutes, or until the topping turns golden brown and the apple filling bubbles around the edges. To prevent excessive browning, loosely cover the cobbler with aluminum foil halfway through baking if necessary.
  7. Cool and serve: Remove from oven and let the cobbler cool on a wire rack for at least 5 minutes. Serve warm, at room temperature, or cold. It pairs wonderfully with vanilla ice cream or salted caramel sauce if desired.
  8. Store leftovers: Store any leftovers tightly covered in the refrigerator for up to 5 days. Reheat in the microwave or bake covered at 300°F (149°C) for about 20 minutes until warmed through.

Notes

  • Use firm and tart apple varieties like Granny Smith, Honeycrisp, or Braeburn for best flavor and texture.
  • Peeling apples is recommended for a smooth, tender filling, but you may leave the skins on if preferred for added texture.
  • Buttermilk adds tanginess and moisture to the topping; substitute with milk plus 1 tablespoon lemon juice or vinegar if unavailable.
  • Prevent burning by checking at 30 minutes; cover loosely with foil if the topping browns too quickly.
  • Let the cobbler rest after baking so the filling sets slightly, making it easier to serve.
