Instructions
- Prepare and season chicken: Dice the boneless skinless chicken thighs into ¾-1 inch pieces and place them in a medium bowl. In a separate container, mix together the smoked or plain paprika, granulated garlic, kosher salt, freshly ground black pepper, granulated onion, crushed oregano, crushed thyme, and cayenne pepper. Add 1 tablespoon of light flavored olive oil to the spice mixture, then pour over the chicken and toss thoroughly to coat each piece evenly. Let the seasoned chicken rest for at least 10 minutes to allow the flavors to meld.
- Cook chicken: Heat 2 tablespoons of light flavored olive oil in a large skillet over medium-high heat until hot but not smoking. Arrange the chicken pieces in a single layer, being careful not to overcrowd the pan to ensure proper searing. Sauté the chicken, stirring or turning the pieces constantly, until they are lightly browned and cooked through, which should take a few minutes.
