  • 1 teaspoon dried parsley (or 2 teaspoons fresh chopped parsley)
  • 3 tablespoons (24g) all-purpose flour
  • 2 cups (480ml) whole milk
  • 3 tablespoons (43g) unsalted butter
  • 1/2 cup (about 50g or 1.75 ounces) shredded sharp white cheddar cheese (remaining from total 1.5 cups) for topping

Instructions

  1. Prepare Potatoes: Peel the potatoes and cut them into approximately 3/4-inch pieces. Place the chopped potatoes in a medium pot and cover with water. Bring to a boil and cook for 5–6 minutes until the potatoes are slightly softened but not fully tender. Drain the potatoes thoroughly.
  2. Combine Potatoes, Ham, and Cheese: Grease a 9×13-inch or similar-sized (3–4 quart) oven-safe dish. Add the warm, drained potatoes, cubed ham, and 1 cup of shredded cheddar cheese. Gently toss the mixture together to combine evenly and set aside.
  3. Preheat Oven: Set the oven to 375°F (191°C) to allow it to reach the proper baking temperature while preparing the sauce.
  4. Make the Sauce: In a large skillet or saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking and stirring occasionally until the onions soften, about 3 minutes. Stir in salt, pepper, smoked paprika, ground mustard, dried parsley, and flour until the mixture is well combined and the flour absorbs any moisture. Reduce the heat to low, then slowly whisk in the whole milk and let it simmer for 3–5 minutes until thickened to a gravy-like consistency. Remove from heat and adjust seasoning as desired.
  5. Combine Sauce with Ham and Potatoes: Pour the warm sauce over the potato and ham mixture in the baking dish. Toss gently to coat everything evenly with the sauce.
  6. Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes to meld flavors and cook through.
  7. Add Cheese Topping and Finish Baking: Remove the foil and sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the casserole. Return to the oven uncovered and bake an additional 5–10 minutes until the cheese is melted, bubbly, and golden around the edges.
  8. Garnish and Serve: Remove the casserole from the oven and garnish with chopped fresh parsley, green onions, chives, or a drizzle of hot sauce as desired. Serve warm.
