Ingredients
Scale
Crust
- 1 ½ cups crushed graham crackers
- ¾ cup toasted pecans
- ½ cup melted butter
- 2 tbsp sugar
Cheesecake Filling
- 8 oz cream cheese
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 ½ cups whipped topping
Toppings
- 1 can (21 oz) cherry pie filling
- 2 cups whipped topping (for top layer)
- ¼ cup chopped toasted pecans
- 3–4 fresh cherries (optional, for garnish)
Instructions
- Prepare Crust: Combine the crushed graham crackers, toasted pecans, melted butter, and sugar in a mixing bowl. Press the mixture evenly into the bottom of a 9×13-inch pan to form a firm crust. Place the pan in the refrigerator and chill for 30 minutes to set.
- Make Filling: In a separate bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla extract, and lemon juice, continuing to beat until fully combined and creamy. Gently fold in 1 ½ cups of whipped topping until the mixture is light and fluffy. Spread this cheesecake filling evenly over the chilled crust.
- Add Topping: Spoon the cherry pie filling evenly over the cheesecake layer. Then spread the remaining 2 cups of whipped topping gently and smoothly on top to create a creamy finish.
- Garnish & Chill: Sprinkle the top layer with chopped toasted pecans for added texture and flavor. Optionally, garnish with fresh cherries for a decorative touch. Refrigerate the entire cheesecake for at least 4 hours, preferably overnight, so it can set well before serving.
Notes
- Be sure to toast the pecans for enhanced flavor and crunch.
- Chilling the crust before adding the filling helps it hold together better.
- Use full-fat cream cheese and whipped topping for a richer texture.
- This dessert is best served well chilled and can be stored covered in the refrigerator for up to 3 days.
- Fresh cherries on top are optional but add a nice visual appeal and slight tartness.
