  • Author: Mariam
  • Total Time: 27 minutes
  • Yield: 6 servings 1x

Description

A refreshing and hearty Chicken Caesar Pasta Salad combining al dente bowtie pasta with crisp romaine lettuce, tender rotisserie chicken, crunchy toasted garlic panko breadcrumbs, and freshly grated parmesan cheese. Tossed in a creamy homemade Caesar dressing, this salad makes a perfect quick meal or side dish.

Ingredients

Scale

Pasta and Salad

  • 2 ½ cups bowtie pasta (or your favorite type of pasta, cooked)
  • 2 heads romaine lettuce, chopped
  • 2 ½ cups rotisserie chicken, torn or cut into bite-size pieces

Dressing and Toppings

  • ⅓ cup Classic Homemade Caesar Dressing (or more to taste)
  • 1 cup toasted garlic panko breadcrumbs
  • 1 cup freshly grated parmesan cheese

Instructions

  1. Boil Pasta: Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions for al dente, approximately 11-12 minutes.
  2. Cool Pasta: Drain the pasta and rinse thoroughly with cold water to stop the cooking process. Set aside to cool while you prepare other ingredients.
  3. Toast Breadcrumbs: Prepare the toasted garlic panko breadcrumbs as desired and allow them to cool completely.
  4. Make Dressing: Prepare the classic homemade Caesar dressing.
  5. Chop Lettuce: Chop the two heads of romaine lettuce and place into a large mixing bowl.
  6. Shred Chicken: Take apart the rotisserie chicken, preferably using the breast meat, and tear or cut it into bite-sized pieces.
  7. Assemble: Add the cooled pasta, shredded chicken, toasted garlic panko breadcrumbs, and freshly grated parmesan cheese to the bowl with the chopped romaine.
  8. Toss and Serve: Pour the Caesar dressing over the salad and toss thoroughly to combine all ingredients. Serve immediately, or store leftovers in an airtight container in the refrigerator for up to three days.

Notes

  • Use any pasta shape you prefer, but bowtie or farfalle works well to hold the dressing.
  • To make toasted garlic panko breadcrumbs, sauté panko breadcrumbs with minced garlic in a little olive oil until golden brown.
  • The homemade Caesar dressing adds freshness, but you can substitute with a store-bought version if time is short.
  • Ensure the pasta is well cooled before mixing to keep the salad crisp and prevent wilting the lettuce.
  • Store leftovers in the refrigerator and consume within three days for best taste and safety.
