Ingredients

Scale

Cookie Dough

  • 1/2 cup (108g) unsalted butter, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/3 cup (75g) light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp red gel food coloring
  • 2 tbsp unsweetened cocoa powder (not dutch process)
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt
  • 1 1/3 cup (175g) all-purpose flour

Filling

  • 1/3 cup Chocolate SunButter

Topping

  • White candy melts (or white chocolate), to drizzle on top
  • Optional sprinkles for decoration

Instructions

  1. Cream Butter and Sugars: In a large bowl, use a hand mixer or stand mixer with the paddle attachment to beat together the butter, granulated sugar, and light brown sugar until the mixture is light and fluffy, about 3-5 minutes.
  2. Add Wet Ingredients: Mix in the egg, vanilla extract, and red gel food coloring until fully incorporated, scraping down the sides of the bowl as needed.
  3. Incorporate Dry Ingredients: Add the unsweetened cocoa powder, baking soda, and kosher salt to the bowl. Mix until well combined.
  4. Add Flour and Form Dough: Gradually add the all-purpose flour, mixing just until combined. Use a rubber spatula to finish mixing by hand to avoid overworking the dough.
  5. Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to firm up and develop flavors.
  6. Prepare Filling: While the dough chills, line a plate with parchment paper and place heaping teaspoon-sized dollops of Chocolate SunButter on top. Freeze these until hardened, about 20-30 minutes.
  7. Preheat Oven: Once dough is chilled and filling hardened, preheat the oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  8. Form Cookies: Using a large cookie scoop (about 3 tablespoons of dough), scoop the dough and flatten each ball slightly in your palm. Place a frozen SunButter dollop in the center and carefully seal the dough around it completely to form a ball.
  9. Bake: Arrange four stuffed cookie dough balls on the prepared baking sheet. Bake for 12-14 minutes until the edges look dry but the center is still pale, slightly puffed, and just barely underbaked.
  10. Shape Cookies: Immediately after removing from the oven, use the inside curve of a fork to gently press the sides of each cookie inward to create a uniform shape.
  11. Cool Slightly: Let the cookies rest on the baking sheet for a couple minutes before transferring them to a wire rack to cool completely.
  12. Repeat: Continue baking the rest of the cookie dough in batches, keeping unused dough refrigerated and SunButter filling frozen between batches.
  13. Drizzle Topping: Melt the white candy melts or white chocolate and drizzle over the cooled cookies. Optionally, add sprinkles for decoration.
  14. Serve: Allow the topping to set before enjoying these rich, soft chocolate filled red velvet cookies.

Notes

  • Using gel food coloring provides vibrant red color without adding extra liquid to the dough.
  • Freezing the Chocolate SunButter filling first prevents it from melting too quickly during baking, ensuring a luscious center.
  • Be careful not to overbake to keep the cookies soft and tender with a molten filling.
  • If you don’t have Chocolate SunButter, you can substitute with chocolate hazelnut spread or chocolate peanut butter, but adjust sweetness accordingly.
  • Store leftover cookies in an airtight container at room temperature for up to 3 days or freeze for longer storage.
