Instructions

  3. Arrange Pecans: Group the toasted pecans in clusters of 3 on the prepared baking sheets, leaving about an inch of space between each cluster. Set aside.
  4. Make Caramel: In a medium saucepan, melt the butter over medium-high heat. Stir in brown sugar, corn syrup, and sweetened condensed milk. Cook, stirring continuously until the mixture reaches 235-240°F on a candy thermometer (soft ball stage).

  6. Melt Chocolate: Fill a pot about ¼ full with water and bring to a gentle simmer over medium heat. Place a heatproof bowl over the pot (double boiler setup), ensuring the bowl doesn’t touch the water. Add milk chocolate chips and stir continuously until the chocolate is fully melted and smooth.
  7. Add Shortening and Top Clusters: Stir the shortening into the melted chocolate to give it a smooth glossy finish. Spoon about ½ tablespoon of the chocolate on top of each caramel-coated pecan cluster.
