Instructions
- Prepare the Ganache: In a medium heatproof bowl, combine the chopped dark chocolate and butter. In a small saucepan over medium heat, gently heat the heavy cream until it just begins to simmer. Pour the hot cream over the chocolate mixture and let it sit undisturbed for 5 minutes to melt the chocolate. Whisk the mixture until smooth and glossy. Cover and refrigerate the ganache for about 1 hour or until firm enough to scoop.
- Form the Truffle Balls: Line a large baking sheet with parchment paper. Using a small cookie scoop or spoon, scoop out portions of the chilled ganache and quickly roll each into smooth balls between your hands. Place each ball onto the parchment-lined sheet. Return the baking sheet to the refrigerator and chill the truffles for another 30 minutes to firm up completely.
- Coat with Cocoa Powder: Pour the dutch cocoa powder into a small bowl. Roll each chilled truffle ball in the cocoa powder until fully coated. Return the cocoa-coated truffles to the refrigerator until ready to serve.
- Dip in Melted Chocolate (Optional): For an added touch, dip truffles into melted dark or white chocolate. Use a fork or dipping tool to coat each truffle evenly, allowing excess chocolate to drip off. Place dipped truffles on parchment paper and immediately sprinkle with flaky sea salt or crushed candy canes for a festive garnish. Refrigerate until the chocolate coating has hardened.
