Instructions

  1. Prepare Cupcake Batter: Preheat your oven to 350°F (175°C) and line two muffin tins with 15 cupcake liners. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and kosher salt until well combined.
  2. Combine Wet Ingredients: In a medium bowl, whisk together the melted cooled butter, milk, egg, and pure vanilla extract. Pour this mixture into the bowl with the dry ingredients and gently stir until just combined, being careful not to overmix.
  3. Fill and Sprinkle: Divide the batter evenly among the cupcake liners, filling each about 3/4 full. Lightly sprinkle the tops with cinnamon sugar for that signature churro flavor.
  4. Bake Cupcakes: Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and allow the cupcakes to cool completely before frosting.
  5. Make Frosting: In a large bowl, use a hand mixer to beat together the softened cream cheese and butter until smooth and creamy.
